Of Shortbread and Cannibalism

funeral biscuitsImagine a knock at the door and, when you answer, the caller hands you a package. It contains a wrapped packet of biscuits tied with a black ribbon.  Instantly, you know there’s been a death, and this is your invitation to the funeral.

A Victorian Funeral Tradition

Funeral biscuits flourished as part of the elaborate panoply of the Victorian funeral. References to them are found in England and parts of North America. Surviving recipes are rare, which suggests they might have been very simple or an adaptation of something most cooks already knew how to make.

Those recipes or descriptions that do exist suggest a sweet similar to shortbread or a molasses cookie. More elegant households favored a lighter sponge antique kitchensimilar to ladyfingers or Savoy biscuits. The shortbread style often bore a design such as an hourglass, heart, cross, skull, cupid or other symbolic image. The use of such stamps gives us a clue to the consistency of the dough in use.

The biscuits appeared at the funeral as an accompaniment to a restorative glass of sherry or port wine. Mourners or to those unable to attend received wrapped packages of biscuits. And, as mentioned above, they could also be used as an invitation.

Bakeries produced biscuits to order, especially for large funerals. Between two and six biscuits were bundled in waxed paper. Sometimes, this wrapping bore a design with the usual skulls, hearts, etc. since the Victorians were apparently Goths at heart. At other times, the paper displayed the death notice of the deceased, a poem, or a Bible verse (see an example here). Black wax or a black ribbon sealed the package. For this keepsake of the departed, presentation mattered.

The funeral biscuit tradition faded with the advent of professional funeral parlors and the maelstrom of the World Wars, but its roots run deep in history. There is a connection between these tidy little biscuits and the the idea of claiming an energetic connection to the deceased.

Prior to the oh-so-hygienic funeral parlor, family members awaited burial in the home–in the parlor, if the house had such a room. Relatives, friends, and neighbors visited to pay their respects. According to folk tradition, objects belonging to or placed around the dead absorbed some of their qualities, and it was possible for the living to gain those qualities by possessing or consuming them. The same kind of sympathetic magic appears in Game of Thrones, when Daenerys consumes the heart of a stallion so that her child will have the horse’s strength. In both cases, a tangible (edible) medium transmits the deceased’s qualities to the living.

Neolithic funerals involved the occasional bit of cannibalism (several examples have been found in southern Iberia). In Central Europe during the Middle Ages, household bakers made “corpse cakes” (sometimes shaped like gingerbread men) from dough risen on the body. Mourners consumed the cakes to absorb the deceased’s virtues. In similar fashion, in Wales and the West Country of England, sin-eaters (usually someone at the bottom of the social scale) consumed bread and salt left on the body, thus absorbing the dead man’s guilt. In some accounts, villagers beat the sin-eater afterward to punish those transgressions.

There is a long and winding connection between corpse cakes and the Victorians’ polite shortbread marked with a skull. Nevertheless, given the nineteenth-century appetite for heavy symbolism, it’s likely at least some understood and accepted that grim association.

I did make an attempt at recreating funeral biscuits. Because this entry is already getting long, I will detail that adventure in another post.

Rapping with the Dead

Who doesn’t love a good coincidence, especially when it involves ghosts?

Recently I was blathering with a friend about contacting the dead (as one does while folding laundry). I’m stocking up on ideas for a new story, and it was an unplanned but fruitful topic. Literally minutes later, I got an email for a virtual event.

Cue Weird Homes Tour and Atlas Obscura featuring Brandon Hodge. Hodge owns an Austin, Texas residence stuffed with Spiritualism-related objects. For one very fun hour, Hodge took viewers through his collection of antique planchettes, Ouija boards, and other paraphernalia.

It was like a gift-wrapped package falling through the monitor and into my lap. Spiritualism fascinates me, and Hodge’s enthusiasm and fab website are an ideal introduction to the subject.

A Victorian Obsession

The Spiritualist movement gained traction in the mid-1800s. It gave us mediums, automatic writing, ectoplasm, spirit photography, and table-rapping.

Essentially, it’s summoning the dead for a chat. Believers included the rich and famous, from Lucy Maud Montgomery to Arthur Conan Doyle.

For a buttoned-up society focused on industry, cataloguing, and petticoats for the piano legs, it’s interesting how Victorians embraced the paranormal. Their enthusiasm can be seen by the many, many periodicals dedicated to the topic, such as The British Spiritual Telegraph.

Celebrity

Mediums achieved a kind of celebrity, like the Fox sisters in America. Some grew rich. Others were ingloriously debunked for coughing up gauze

“ectoplasm” or manipulating the seance props with wires.

The majority of mediums were women. This was one place she could take center stage without question. And, since the bereaved were willing to pay, she  could also make a good living.

Spiritualism carried on—unsurprisingly—through the disasters of WWI and the Spanish flu epidemic until fading in the 1930s.

Stories

I’ve used the highlights of Spiritualism before. In A Study in Ashes, Evelina and Tobias attend a séance. At the time, I’d wanted to delve more deeply into the subject, but that wasn’t part of Evelina’s story. She simply paved the way for more.

Now—thanks to a chance lockdown presentation—I’m anxious to do more research. After all, what’s more perfect than something that is Victorian, paranormal, and involves intriguing devices? I’m positive there is a role for a planchette or two in my Hellion House series.

 


Fatal Fashion

We think of clothing as a means of self-expression—fleeting or classic, occasionally silly, and frequently entertaining. Rarely do we think of adornment as dangerous, but history is filled with literal fashion victims.

Rewind to the beginning of the nineteenth century. Clothing was dyed by natural sources, so unless one’s wardrobe was exotic and very expensive, color choices were dull compared to what we have today. Then when the whale oil used in domestic lighting was slowly replaced by coal gas, the gas industry produced coal tar, and industrialists began experimenting to find a use for this by-product. The result was gorgeous aniline dyes, which created an explosion of bright, clear hues of every description that were affordable to everyone. Predictably, the fashion pages became giddy rainbows of choice.

There was only one hiccup—there were no rules about testing these new products for consumer safety. With chromium, mercury and arsenic in the mix, this rapidly became an issue. While the solutions in some fabrics were relatively harmless—perhaps because they were not worn next to the skin—others, like the gaily striped stockings in vague during the 1860s, were activated by heat and perspiration. Consuming alcohol could also speed the action of these toxins. Blisters, rashes, and even death followed, particularly among the factory workers who handled these materials without protective gear.

These new shades were also used in home décor, candy manufacture, and artificial flowers. Green had a particularly nasty reputation, since its key ingredient was arsenic. The pigment Sheele’s Green was a particular favorite of Napoleon Bonaparte. There is some suggestion the arsenical paint on his walls was a contributor to his eventual death.

There is a saying about walking a mile in someone else’s shoes.  Be careful what you’re getting into! If you were in old Venice, those shoes might be chopines. These platform shoes proved disco had nothing on the Renaissance. Originally arriving from Turkey in the 1400s, they were invented to lift the wearer out of the mud of the streets. The style lasted in Europe until the mid-1600s. The height of the heel also became linked to the status of the wearer, and both noblewomen and concubines wanting to make a statement had them.  While many examples of chopines are around seven or eight inches high, other examples reach twenty inches. Women requires canes and servants to move around, and there is more than one story about women falling to their death. Laws were passed to limit the height of the shoes, but to little effect.

Cosmetics were another pretty way to die. Queen Elizabeth I was reported to use Venetian Ceruse as a skin whitener. The paste was a mix of vinegar and white lead and was apparently applied quite thickly. A popular companion to this white base was cinnabar or vermilion rouge, derived from mercury and Sulphur.  This duo, while the height of Tudor fashion, caused skin eruptions, hair loss, and bleeding gums.

To complete the look, women used Atropa belladonna (deadly nightshade) to enhance their eyes. Bella donna means beautiful woman, and a drop or two dilated the pupils to enhance a dark, enticing gaze—right up until increased heart rate, visual distortion, and eventual blindness took over.

The list of potentially fatal fashions goes on and on, from combustible crinolines to young girls removing ribs so their corsets could be cinched that much tighter. Lest one think women alone were subject to dangerous dress, the mercury used in felting men’s hats was well-known to produce “mad” or at least very sick hat makers. Even setting aside the hazards of sweat shops, it was a dangerous time to be in the clothing trade.

Have we escaped such madness in the twenty-first century? I’m not so sure—we have our own version of fashion madness, though hopefully nothing quite so drastic. All the same, if someone tells me they’ve discovered a trend to die for, I’m running the other way!


Five Lethal Weapons for the Genteel Heroine

There are so many ways a lady could be deadly without wrinkling her gown. Forget the garter daggers and muff pistols and sword canes in the parasol—those are all terribly stylish but just scratch the surface of potential mayhem. Here are some juicy examples torn from the pages of yesteryear’s headlines:

1. A Fashionable Murder

The New York Times of March 1, 1898, reports that Barotholomew Brandt Brandner, a Parisian visiting Chicago, entered a saloon on State Street only to be murdered by an unknown assailant. Autopsy results showed a concussion, probably from a blow with a liquor bottle. But there was also a puncture that entered the left eye and extended far into the interior of the skull. This was assumed to be caused by a lady’s hat pin. Brandner survived for a week but eventually died from the injury.

Women’s hat pins, while pretty, were sharp steel and usually six to twelve inches long, depending on the style of the hat. Women were well aware of the pin’s potential for self-defence.

2. A Tried and True Method

A true Black Widow, Mary Ann Cotton (née Robson) was born in 1832 in a mining town in the northeast of England. Life in the laboring classes was hard, but enterprising Mary Ann discovered the modern miracle of life insurance. During the course of her forty years, Mary Ann had four husbands (two at once), several lovers, thirteen children, and lots of insurance claims. She was survived by one husband and two children. The estimated number of her victims was around twenty. She was hanged in 1873.

In the age of cholera, gastric fevers, and no refrigeration, stomach complaints were common. So were rodents, and arsenic was a common component of rat poison. Although the sale of arsenic was somewhat regulated, it was still available at the local chemist. Mary Ann brewed in tea, serving unwanted relations until a doctor noticed the body count. Too bad for her, tests for arsenic poisoning were available by the time her final victim was exhumed during the investigation.

Poison has a reputation—deserved or not—as a woman’s weapon. It’s true that the nineteenth century saw a number of cases with wives wishing to be merry widows. However, the amount of hysteria generated by the Victorian press regarding “secret poisoners” makes it sound as if every female forced into a corset and bustle was out for revenge. Then again…

3. Speaking of Exhumation

Back in the day, medical students had limited access to corpses for dissection. The law of supply and demand gave rise to “resurrectionists,” who dug up the newly dead and sold them to surgical schools. Needless to say, grave robbing is a tedious business and someone was bound to find a way to skip the muddy bits. Why bother with all the midnight shoveling when you could murder someone in the comfort of your own home?

William Burke and William Hare did exactly that in Edinburgh, Scotland, in 1828, when they killed sixteen people and sold their remains. These deaths gave rise to the term “burking,” or asphyxiating the victims by sitting on their chests. It was a low-tech and largely undetectable means of murder.

However, as so often happens in history, the women are often left out of the story. Helen McDougal, Burke’s common-law wife, and Margaret Hare, wife of William Hare, shared in the crimes. Incredibly, of the four, only Burke was eventually convicted.

4. Heavy Metal

There’s always someone in the crowd who goes for the direct approach. When it comes to lethal historical ladies, no one cuts (or chops) to the chase like Lizzie Borden. It’s a good reminder that a lady’s weapon does need to be dainty, just effective.

Lizzie Andrew Borden was tried and acquitted for the August 1892 axe murders of her father and stepmother in Fall River, Massachusetts. Experts and hobbyists alike still debate her innocence and whether her gender impacted the verdict.

5. Fun with Corsets

Corsets or “stays” come in different configurations, depending on the fashion of the day. At the center front is the busk, a slender piece of bone, wood, or other hard material that slides into a pocket of material sewn into the garment. The function of a busk is to keep the corset rigid in order to shape the figure of the wearer. Busks were often highly decorated and given as sweetheart gifts—given the intimate way they were worn, one can only imagine the delicious banter involved.

There is also the suggestion that a small dagger could be slipped into the front of a corset in place of the busk. Although a popular trope, I’ve never been able to find an actual historical precedent for this—probably for good reason. One problem is the hilt sticking out of one’s bodice. Another is the awkwardness involved in drawing a stabby thing that close to one’s face. I leave the option here for consideration, but my money is still on the hat pin for wardrobe weaponry.

How the Media Invented Jack the Ripper

Jack the Ripper is a favorite subject for fiction writers for many reasons and the notion that the sinister drama is true ranks high among them. However, we don’t know the killer’s name or occupation, if there were one or several killers, and even the exact number of victims. The number of suspects is staggering. Despite the amount of ink spilled on the subject, the undisputed facts of the crime fill only a slim volume. So why, in a time and place where murders were common, did the Ripper case garner so much public attention?

One might say the media co-created the crime, both intentionally and by reflecting the Zeitgeist of the era. While the residents of Whitechapel were justifiably terrified by the murders, the wider public was served up the villain their imaginations demanded.

The dark side of London fascinates those able to view it from a safe distance. By the time of the Ripper, public hangings, complete with printed confessions sold for a penny, had long been entertainment. Relics of famous crimes were sold in the streets, tourists went to the mental hospitals to gawk, and Madame Tussaud created her waxwork Chamber of Horrors, depicting the true crimes of the day. Plays and novels followed where the newspapers led, presenting melodramatic versions of famous murders—or entirely bizarre urban legends, like Spring-Heeled Jack. On top of this was a fascination with the duality of the human psyche—just before the Ripper’s arrival came Stevenson’s smash hit Dr. Jekyll and Mr. Hyde. By 1888, the public appetite for Gothic drama was prodigious.

A climate of social unrest underscored this mood. The Ripper murders are generally agreed to begin in April or August of 1888. Scant months before, soldiers mounted a bayonet charge against jobless protesters in Trafalgar Square. In simplistic terms, the incident reflected the deep division between the prosperous ruling class, who lived mostly in the West End districts like Mayfair, and the impoverished areas of the East End, such as Whitechapel. The East End also housed the migratory population of the docks, abused factory laborers, and immigrant populations. Is it any wonder the bogeyman of the day sprung from those desperate streets? The Ripper was a personification of middle-class fears.

And then there were the police. They had been increasing their numbers over the past few decades, but rather than increasing a sense of safety, public attention was fixed on a series of scandals that undermined their credibility. Missteps during the Ripper investigation gave the public ammunition to criticize, and the press lovingly documented every moment of the train wreck.

As mentioned above, one of the difficulties with the Ripper case is knowing when it began and ended. Prostitutes were frequently murdered, and despite general indignation at police inaction, not much ever got resolved. Were Emma Smith and Martha Tabram Jack’s victims, or those of another? They both had violent deaths—Tabram was stabbed 39 times—but were not mutilated on the scale of later victims. It was those breath-taking excesses that signaled something new was afoot, and the press got to work.

Delicious Gothic horror. Simmering social anxiety. An excuse to air grievances against whoever came to hand—corrupt officials, suspicious radicals, unionists, foreigners, and an unpopular and inept police force. Jack the Ripper’s crime spree was an editor’s dream moment, ripe for endless titillation. Crime sells papers, and the presses ran around the clock during peak carnage. With improved printing technology, illustrated depictions of crimes could be reproduced in greater detail than ever before. Concerned citizens worried that such graphic displays might unbalance the minds of readers, much like the complaints about modern video games. Such quibbling stopped no one—the papers kept the Ripper Murders in the public eye as long as they possibly could.

Much of what we know about Jack the Ripper–including the name–came from a series of notes written by Jack to Scotland Yard and the Central News Agency. The true origin of these letters is doubtful, and their timing perhaps calculated to revive public interest during a slump. The grammar and word usage suggest a forger attempting to appear uneducated. Did the press write the letters themselves? It’s a popular theory, and if that’s true, the version of Jack we carry in our imaginations—taunting, cannibalistic, almost cheeky—is a pure fabrication. The media put a face on the most famous serial killer of all time to boost circulation.

Is that what actually happened? As with so much of the case, we don’t know the truth. There is even some uncertainty over who was the last victim—Mary Jane Kelly, or another murdered prostitute. What we do know is that sometime around 1889 the murders stopped and Jack’s audience moved on. In 1890, Wilde’s The Picture of Dorian Gray appeared, summing up the public’s troubled self-reflection.

Popular attention is fickle, and even Jack the Ripper couldn’t hold center stage forever. Another fascination was pushing Gothic melodrama aside—the clear-eyed rationality of the consulting detective. While the genre was not new, its popularity rose, giving readers the opportunity to solve crimes from the comfort of their firesides. Times had changed and, after the Ripper’s confounding chaos, certainty, justice, and the ever-increasing power of science held appeal.

It was time to invent a new avatar.

Eat Like a Victorian—on burgers, fries, and soda

Nothing quite says modern hustle like burger joints, food trucks, and grabbing junk food for that night’s Netflix binge. Fast food answers the problem of our hectic lives, where there’s places to be and work to be done and absolutely no time to spend crafting artisan eats in the kitchen. Plus, many so-called kitchen nooks in new apartments are barely big enough to comfortably butter toast, much less mess around with stock pots and canning jars. Picking up something to go is the obvious answer.

This need isn’t new. As long as there have been hungry people, there’s been food for sale in easy-to-eat forms. Ancient Roman thermopolia provided affordable take-out. Street vendors have been around as long as hungry urbanites have existed. Pretty much every culture has the “stuff wrapped in bread product,” whether that’s samosas, Cornish pasties, or the Czech klobasnek/kolaches. In the old days, if you were out harvesting in the fields or heading down a mine shaft, you wanted food that can be stuffed in a pocket to eat later. We might have better health regulations, but the principles behind fast food remain the same.

The pedigree of some current favorites is fun to look at. Hamburgers and hot dogs immediately come to mind, since they follow the meat-in-bread pattern. Speculation has it the essential ground meat that makes up the hamburger patty was introduced to Europe by invading hordes in the thirteenth century. Tartar horseman stashed raw meat beneath their saddles to tenderize it, a practice that was happily abandoned by later chefs. In the seventh century, Russians brought their version of the dish, steak tartare, to Hamburg, Germany, where it morphed into the cooked version we know now.  In the early 1800s, the “Hamburg steak” was well-enough established to be included in the Oxford English Dictionary. The dish emigrated to America in the mid-1900s and eventually appeared with a bun at the 1904 St. Louis World’s Fair. The first burger chains appeared in the 1920s and the cheeseburger debuted a decade later.

Hot dogs followed a similar path. Sausages have been around since the ancient world, ultimately establishing themselves in the German cuisine that came to America in the mid-1800s. Around 1870, a German immigrant named Charles Feltman set up a food cart on Coney Island and did a brisk business selling sausages in a bun. From there they were introduced at ball parks as a snack to go with beer.

What about sides? The history of French fries is contested, with origin stories dating back to the seventeenth century. Belgium is petitioning UNESCO to endorse the fry as an icon of Belgian heritage. The story goes that in 1680 the River Meuse froze over, preventing citizens of Namur from catching and frying the small fish they were used to, so they fried potatoes instead. American soldiers, evidently confusing French-speaking Belgians with their neighbors, encountered the fried treat during WWI, taking so-called French fries back to the US.

There are other contenders for title of fry inventor. Spain has a claim. After all, they introduced the potato to Europe in the late 1500s after learning about it in the New World. France maintains an eighteenth-century street peddler on Paris’s Pont-Neuf bridge introduced French fries to the world. Canada has a special affinity since fries are an integral ingredient in poutine (invented in Quebec the 1950s). Without argument, America eats the most per capita.

The first recipe for onion rings is more certain. It’s generally agreed to have been published in John Mollard’s 1802 cookbook, “The Art of Cookery Made Easy and Refined.” Mollard was a cook and proprietor of the Freemasons’ Tavern at Lincoln Inn Fields in London. However, the dish did not become popular until it emerged in its full cholesterolific glory in twentieth century America.

Speaking of fried food, the potato chip was invented by the appropriately-named George Crumb in 1853, a chef in Saratoga Springs, New York. Originally called Saratoga Chips, they were eventually made and marketed by a company in Cleveland, Ohio. Herman Lay introduced potato chips to many customers from Atlanta to Nashville by selling them from the trunk of his Ford Model A. He eventually founded H.W. Lay & Company, which merged with the Frito Company in 1961, which eventually merged with Pepsi-Cola.

Naturally, we want something to drink after eating all these salty foods. Mineral waters have been consumed since Roman times, as they were believed to have curative powers. Readers of Regency novels will be familiar with invalids “taking the waters” at various spas. A man-made version of carbonated beverages was first produced in the 1760s by adding chalk and acid to regular drinking water. Initially, wine was added as flavoring, but various sweet syrups followed and by the 1840s, soda fountains began appearing in pharmacies.

In 1876, Philadelphia pharmacist Charles Hires concocted a mixture of herbs, roots and berries and added it carbonated soda water to produce the first root beer. In 1886, another formulation containing coca leaves and the caffeine-rich kola nut became Coca-Cola. Marketed as a tonic, the original formula contained extracts of cocaine, which wasn’t illegal at the time. In 1893, Pepsi-Cola was introduced as a digestive aid. Soon bottling facilities replaced soda fountains and, by the 1920s, soft drinks were available via vending machines. The medicinal claims surrounding such beverages were dropped and as early as 1942, the American Medical Association was specifically mentioning soft drinks as it recommended consumers limit their intake of sugar. As the saying goes, the more things change, the more they stay the same.

The Slow Food movement aims to recover the joys of delicious home cooked cuisine, along with traditional methods of preparation. However, as the hipsters rush to rediscover bone broth and artisan sauerkraut, it’s worth remembering that food is as variable as the people who eat it. Our cuisine has a complex family tree, along with a few crumpled food wrappers tucked in the branches. Fast food—despite the overwhelming corporatization involved—is equally traditional, with a centuries-long story of its own.

 


Botanical Tales

Those who follow me on Instagram (RowanAshArt) will know that I have a great interest in plants and flowers. It’s not just because the botanical world is photogenic enough to overcome my poor photography skills. Somewhere in the distant mists of childhood I decided I wanted to become a herbologist. Why? Maybe it was all the herbal healers that showed up in the fantasy books I read. Anyhow, herbology got laughed right out of the career counsellor’s office and I took an English degree instead because, y’know, we have to be practical.

Fast forward to the present. I’m still interested and have done some learning along the way. I’m in a pitched battle with Things That Munch in the garden, but have had a few victories, including a very healthy bay tree and a rosemary that will eventually take over Vancouver Island. With luck, I may even have tomatoes this year. It’s all about figuring out what plants go in what location and how many plants it takes to yield enough material to be useful once the deer, bugs, and rabbits help themselves.

But beyond all that, I’ve grown interested in the history and literary applications of gardening. There’s the whole murder mystery connection, with Brother Cadfael and his herbarium. There’s also the metaphor of gardening and the mind. I’m in the very early stages of developing a character with an exceptional garden, but it’s as much an expression of her past and her aspirations as of her green thumb. It’s a historical setting, so the extravagant Victorian glass houses and hand-drawn etchings of botanical specimens are part of her world. That Victorian mix of science, superstition, and adventure—not to mention their mania for collecting and codifying everything—are intoxicating to me. It’s great fun to have something in common with a character because we can both enjoy ourselves during the research process.
